LUCKY STAR FIERY FISHCAKES

Makes about 10-12 cakes
Prep time: 30min
Cooling time: 30min
Cooking time: 20min
Ingredients:
FISH CAKES
1 x 400g can Lucky Star Pilchards in Tomato Sauce
1 onion, finely diced
2 green chilies, finely chopped
60-125ml breadcrumbs
1 egg
60ml chopped fresh coriander
salt and pepper to taste
CRUMB
60ml flour
2 eggs, beaten
250ml breadcrumbs
TO FINISH
Oil, for shallow frying
Extra fresh coriander
Lemon wedges
Method:
FISH CAKES
1.) Add the Lucky Star pilchards to a bowl and roughly break the fish apart with a fork. Add the onion, chili, breadcrumbs, egg and coriander and mix well. Season to taste with salt and pepper.
CRUMB
2.) Use about 3T (45ml) of mixture to form each fish cake. Dip each fish cake into the egg, then in the flour, back into the egg and roll into the breadcrumbs. Repeat with the rest of the fishcakes.
3.) Arrange the fishcakes on a plate and place in the fridge for at least 30 min.
TO FINISH
4.) Heat enough oil in a pan for shallow frying and fry a couple of fishcakes at a time until crisp and golden brown. Drain the excess oil on paper towel.
5.) Serve the Lucky Star fishcakes with fresh coriander and lemon wedges.
LUCKY STAR PILCHARDS SHAKSHUKA

Ingredients:
1x400g Lucky Star pilchards in tomato sauce
15ml oil
1 onion, chopped
4 garlic cloves, chopped
10ml curry powder
4 tomatoes, grated
5ml sugar
salt and peper, to taste
4 eggs
5ml dried thyme
salt
toast, to serve
Method:
1.) Add the Lucky Star pilchards to a bowl and roughly break the fish apart with a fork. Set aside.
2.) Heat the oil in a deep pan and fry the onion, garlic and green pepper until soft and fragrant. Add the curry powder and stir-fry for a minute.
3.) Add the grated tomato and sugar and cook until the liquid is reduced. Add the Lucky Star pilchards in tomato sauce and season with the salt and pepper to taste.
4.) Make 4 wells in the mixture in the pan and carefully break an egg into each one. Season the eggs with the thyme and salt.
5.) Reduce the heat and cover the pan with a lid. Slowly simmer until the eggs are cooked to your liking. Serve with toast.
SPINACH AND TUNA PANCAKES

Ingredients:
PANCAKE BATTER
2 large eggs
30ml water
15ml oil
60ml flour, sifted
a pinch of salt
FILLING
15ml oil + extra as needed
2 garlic cloves, shopped
150g baby spinach
15ml tomato puree
400g smooth cottage cheese
1 x 170g Lucky Star tuna chunks, drained
salt and freshly ground pepper, to taste
Method:
PANCAKES
1.) Beat the eggs, water and oil together. Add the flour and salt and beat with a whisk until well mixed and without any lumps. Cover and set aside for at least 15min.
FILLING
2.) Heat the oil in a large pan and fry the garlic until fragrant. Add the spinach and cook until wilted.
3.) Add the tomato puree, tuna and cottage cheese and mix through. Heat and season with salt and pepper to taste. Set aside.
TO FINISH
4.) Heat a bit oil in a non-stick pan and add half the pancake batter. Swirl around the pan to coat the base. Cook briefly until set, flip over with a palate knife and cook on the other side for 1 minute. Carefully remove from the pan and set aside. Repeat with the remaining batter

5.) Put the pancakes on serving plates, spoon the filling down one side, roll up and serve with a salad.
1. This is a promotional competition called So many lekker ways to win big with Lucky Star (the “Competition”) conducted by Lucky Star Ltd (Registration Number: 1946/022718/06) of 8th Floor, Oceana House, 25 Jan Smuts Street, Foreshore, Cape Town (the “Promoter”) in association with Media 24 as media partners- subject to the provisions of section 36 of the Consumer Protection Act, No. 68 of 2008 as amended (“CPA”) and the regulations promulgated there-under, and the terminology used in the aforesaid CPA shall apply to the Competition.

The Promoter draws the attention of all participants to the Media 24 rules which apply to this competition as house on the Shorthand Hub online and Media 24 platforms.
4. YOU, Huisgenoot and Drum will run the competition separately. All participants can only enter the competition once and can only participate on one of the participating Media24 platforms. Participants who therefore participate on one Media24 platform cannot participate in the competition run by another Media24 platform.
5. The Media24 Food Team will select the top five recipe dishes. Lucky Star will then select the top 3, identifying the overall winner as well as the two runners-up.
6. There will be various stages where this competition will run dependant on the media publications by Media 24 during the competition period. Prizes will consist of R5000 cash - For each media publication by Media 24 the 1st of Prize R2500, 2nd Prize of R1500, and 3rd Prize of R1000. The prize also consists of various Lucky Star Hampers to the value of R500.
7. The competition opens on 31 March 2021 and closes at midnight on 20 April 2021.
8. Lucky Star will help the winner create a professional video that shows how their dish is made. The video of the ultimate Lucky Star creation will be shared across social media. All rights, including intellectual property rights and copyright in and to the professional videos and promotional media for these recipes vest in Lucky Star.
9. Winners and overall winner will be announced on the Shorthand Hub and as well as available social media platforms (Facebook, Instagram and Twitter) during the course of the competition and by 19 May 2021. Furthermore, all correspondence regarding the competition will be provided via the Shorthand Hub, Lucky Star Social Media Platforms (Instagram, Facebook, Twitter) and the Media 24 Platforms (HUISGENOOT, YOU and DRUM).
10. Other than as specified in these terms and conditions, Lucky Star has no obligation, financial or otherwise, to the participants with regards to the publication or use of the recipes entered.
11. The prize shall not be awarded to a director, member, partner, employee or agent of, or consultant, or their spouse, partner or members of their immediate family, to the Promoter or any other person who directly or indirectly controls or is controlled by, the Promoter, or to a supplier of goods or services in connection with the competition. The Promoter reserves the right to request a winner to depose an affidavit confirming that he/she does not fall within this category of persons and must further upon request be able to verify their identity by providing a certified copy of their identity document or valid passport.

All rights, including intellectual property rights and copyright in and to the recipes vest in the participant, however once the recipes are uploaded via the Shorthand Hub platform such rights will vest in Lucky Star and Media24. Lucky Star may also use and post the recipe once uploaded. The recipes may be published on Lucky Star and on HUISGENOOT, YOU and DRUM platforms during the entry, voting and winner announcement phases of this competition. The entry created on the microsite and recipes may be shared on social networks as part of the voting process. The panel’s decision on any matter concerning the competition or these terms and conditions is final, and no correspondence will be entered into. You understand that by entering this competition, your recipe, photos and name will be published on various platforms as per these terms and conditions and you enter this competition at your own risk. Media24 and any sponsors take no responsibility for any liability, damage or loss (direct or indirect) that may result from participation in this competition.
13. Prizes are not transferable and will only be given to the winner and not a representative.
14. If for whatever reason the winner cannot be contacted or is disqualified in terms of clause 21 below, the prize will be forfeited to the Promoter for a reselection on the same basis that the original winners were selected.

20. 26. The Promoter has the right to terminate the competition immediately and without notice in the event that, due to reasons beyond its control, it is impossible to continue with the competition.
